Our cutting machines combines advanced modeling and accurate weighing to ensure optimal cutting at fixed, variable, or calculated weights. After weighing the wheel or block, product modeling (depending on the cheese’s complexity) enables precise cutting adjustments. Checkweigher at the machine’s output provides real-time weight feedback, allowing automatic adjustments to comply with European TU1/TU2 standards. Our cheese cutting solutions support fixed-weight cutting through modeling and weighing, variable-weight cutting at predefined angles, and calculated-weight cutting to optimize weight distribution and minimize waste.

Our equipment uses ultrasonic cutting technology to deliver unmatched precision, whether cutting blocks, wheels, or bars. Ultrasonic cutting uses a special blade called a "sonotrode," vibrating at a frequency between 20 and 30 kHz, generated by an ultrasonic generator. This causes the blade to move back and forth 20 000 times per second, reducing cutting force and minimizing product buildup. This technology is especially suited for cutting delicate, sticky, or crumbly cheeses.
